Varietal: Cabernet Sauvignon 100%

Maturation: Eighteen months (including malolactic fermentation) in 25% first use French oak barriques, 40% second use and 35% older French and American barriques and hogsheads.

Alcohol: 14%

Tasting notes / Reviews: Intense, almost black with crimson edges. This wine may throw a light crust after a couple of years in the bottle. Very good varietal and Coonawarra definition with plenty of blackcurrant, blueberry and stalky fruit aromas complemented and cedar like, toasty oak. Just a hint of cigar box giving away the very cool Vintage Conditions. Medium-bodied with a well-rounded rich texture. At first the palate has black olive and vanilla bean characters; the middle palate has plenty of currant fruit flavour with the charry, roasted coffee bean characters coming from the oak at the finish. Cellaring potential, 5 – 7 years.

"The 2003 Cabernet Sauvignon “Bos” was barrel fermented and aged in a mix of American oak hogsheads and French barriques. Purple/black in color, the wine exhibits a fragrant bouquet of earth, cassis, black currants, and dark chocolate. This leads to a medium-bodied, elegant Cabernet with layered red and black fruit flavors, chocolate, and ripe tannins.
