Chablis Vieilles Vignes 2005

Chablis Vieilles Vignes 2005

Varietal: Chardonnay 100%

Soil type: Marly limestone soil

Maturation: 9 months on the lees in stainless steel

Tasting notes: This wine is made from 30 year-old vines and was vinified in stainless steel at a controlled temperature of 15 degrees celsius, and further matured for 9 months on the lees.  The grapes, which are harvested when fully ripe, give the wine a very strong and complex bouquet. With the passage of the time, the honey and acacia aromas, which characterize the wine when it is young, will fade into fragrances of dried fruits and hazelnut..
