This Pinot Noir is produced in a unique style, where 1/3 whole cluster berries are fermented in small open top fermenters to facilitate maximum flavor and color extraction.  The cap is punched down several times a day over a period of 7 to 10 days.  When fermented dry, it is pressed off and racked into French Oak barrels.  It is then aged in 100% French oak from the Allier, Never and Troncais Forest for eleven months, with approximately 35% new barrels.  The wine is further aged for an additional 9 months in the bottle.  Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes.

Tasting note: The 2002 Nichols Pinot Noir, Whispering Vines Vineyard, is deep ruby red. It is supple to the palate.  An array of flavors, such as, plum, cherry, wild berry are layered within smoke and toast.  This Pinot Noir exhibits an explosion of rich fruit with plenty of elegance and finesse.  It finishes with a rich and full bodied to give it a stunning aftertaste.
