Private Reserve Cabernet Sauvignon 2007

Varietals: 86.7% Cabernet Sauvignon, 12.3% Malbec and 1% Merlot
Alcohol: 14%
Maturation: Aged for 20 months in French & American oak barrels with 2 rackings
Tasting notes: Delicious aromas of new leather, star anise and crushed cassis. Full-blown and intense on the palate; ripe blackberry fruit character with an herbal counterpoint of sage, cardamom, and Chai tea. Finishes with cocoa and espresso richness. Very firm tannins will loosen slowly with proper cellaring, allowing this wine to open nicely over the next 4-5 years.
Review: “Garnet violet color. Pure dried berry, chocolate, bacon, olive and delicate dried flower aromas follow through on a supple entry to a dry-yet-fruity medium-to-full body with interesting five spice and raisin bread notes. Finishes with a long, tangy fade. Very interesting wine; pair with spicy Asian beef dishes or mushroom risotto. Exceptional.”
