This sparkling wine was produced “en blanc” to maintain its traditional lightness, while also allowing each varietal’s expression to come through. This cava is produced using the traditional method, with a minimum of 20 months aging before disgorging. Wines are disgorged at the time of the order, so your bottle will have more than 20 months of lees aging.
Light straw, with a fine, consistent bead. Med intensity on the nose with notes of candied lemon, fresh cut grass, wet stone and white button mushroom, with faint rosemary and spearmint herbal tones. Quite dry, rich, mouth-filling mousse, with med sized bubbles. Lemon, pear, white peach and chalky mineral notes present on a palate of pure fruit expression, unadulterated by added sugar. Medium length. Great for aperitifs to get the gastronomic juices going. (Disgorged Aug 20, 2013, Tasted Dec 3, 2013).
