Maturation: 100% stainless steel
Tasting notes / Review: Grapes were grown in south-west facing vineyards, at an altitude of 150-300m, where the soils are mostly composed of argillo schist. The wine was fermented in 100% stainless-steel, then further matured for 3 months. 60% of the wine remained in stainless steel vats, whereas the remaining 40% was transferred to barrique and let lie on the lees. This partial “sur-lie” maturation in oak barrels adds a bit of weight to the wine, as well as further complexity.
