95% Wylpena vineyard Chardonnay (100 year old Grenache stock that was grafted to chardonnay a couple of decades ago. choosing only shaded bottom cordon picked bunches) – fresh & vibrant aromatic upfront fruit
4% old bottle aged Pup Sauvignon Blanc – added complexity
1% barrel aged liquor of 18-year-old Pedro Ximinez (1991) – adding a sweet rancio funk nose
Naturally fermented on lees in a pressure tank for 6 weeks. On the nose, the wine shows a delicate yeast character. It also has a fine bead, indicative of properly completed fermentation. Great mid palate crunch shows off the wines lovely natural acidity.
DogRidge is the first winery in the world to use “Encore” by a closure invented and manufactured in Adelaide by Zork!
