Matthieu Ressejac and Germain Croisille, long-time friends, created the microbrewery Les Acolytes in 2016 in the middle of the Château les Croisille vineyard, in Cahors, where Germain is the winemaker.
Matthieu started to make beers in his garage in 2015 with a kit that he bought on the internet. He loves to try new experiences and constantly improves his skills.
They were joined by their friend Antoine in 2018, who worked for 6 years in Quito, Ecuador at the brewery Los 3 Monjes. He shared his experience and together they produce organic and artisanal beers, always looking for balance, fineness and pleasure.
The first beer that was produced by Brasserie les Acolytes was Clandestina. Since then, the three "acolytes" (friends) have kept creating new beers that are both original and environmentally friendly : organic certified, with no additives, and no filtration.

Process of brewing: High ratio of mashing operation (3 L/KG) to make a strong beer.
Slow and controlled boil for a full starch extraction.
A tiny sugar extraction to make a dry beer.
A tiny dose of sugar is added to make a constance regularity of the final alcohol degree. Two weeks fermentation at 16°C.
Bottling with 5.5 g/L of sugar for a second fermentation.
Golden color. Dry and complex beer. Clandestina presents flavours and taste of malt and citrus fruits.
