They craft their small batch ciders by hand, using heritage apples, low intervention, and slow, long fermentation. The 2021 Killbank Organic Cider blends Nova Spy, Nova Mac, Liberty, Trent, Renner Russet, and Gold rush apples from orchards near Innisfil. It saw 12 hours maceration with secondary ferment and aging entirely in neutral oak.
