Crémant du Jura Blanc de Blancs Coeur de Chardonnay
During his presidency of the Société de viticulture du Jura, Pierre Rolet was instrumental in the creation of the AOC Crémant du Jura in 1995. The Coeur de Chardonnay is a selection of the winery's best sparkling lots from Arbois and Côtes du Jura. The wine was whole cluster pressed and fermented at low temperature (18°C) in stainless, with no MLF, and spent 36 months on lees. Dosage 6g/L. Lemon curd, green and yellow apple, dough, fill an expansive palate, layered with flake salts which linger on the finish. Very complete, drinking smartly now and with time ahead.
