Cremant du Jura Crémant
During his presidency of the Société de viticulture du Jura, Pierre Rolet was instrumental in the creation of the AOC Crémant du Jura in 1995. This blend of 90% Pinot Noir and 10% Poulsard was whole cluster pressed and fermented at low temperature (18°C) in stainless, with no MLF, and spent 24 months on the lees. Dosage 6g/L. Very red fruited, with plum, tayberry and subtle dough on a crisp, racy palate, laced with salt and pithy grapefruit. Crisp and structured, this is built for food.
