Josep Grau oversees 26ha of organic vineyards in Priorat and Montsant, at varying elevations and degrees of llicorella (slate), chalky clay, and decomposed granite. This Garnacha Blanco was grown in clay soils and from young vines. It was native fermented and aged in concrete tanks for 3 months.

Perfumed pear, green fig, white peach roll along the subtly waxen palate, finishing with lingering stony spice. Quite a lot of texture and weight for 12.5%.

"A savoury and fleshy, notably herbal, Mediterranean-style white here from Spain, riper and chewier than the 12.5% alcohol declared would imply. There's a real resinous flavour streak running through the back end, a highly botanical ending to a subtly fruity beginning. It's nice structured as well, and with more than adequate acids to pull it all together, emphasizing the tacky tannic texture. "A volador is Spanish for “flyer,” more specifically from WWII era or perhaps a reference to HMS Volador, a Spanish ship acquired by the Royal Navy. In this case the name for an organically-grown garnacha blanco from the licorella, clay and granite slate soils of Montsant for a viscous and unctuous white.
