Tuscany's Villa Il Palagio has been a vine growing and wine making estate since the 16th century. For the last two decades it's been the summer home of Sting and Trudie Styler, who have transformed the estate into a vibrant organic farm and vineyard. Over that time, they've worked with consultants Alan York and Pedro Parra to design the vineyards and farming practices. This organic, biodynamic blend of 90% Sangiovese, 10% Cabernet Sauvignon comes from the calcareous clays and sands of the hills of Florence, at 330m. After a stainless ferment, it rested for 1 year in older small French barrels. This release is a blend of 2 vintages, hence the NV labelling. Plush black raspberry, black cherry, dark chocolate courses through the plumped palate, with furry tannins pinning in the sides, and a dollop of candle wax sticking to the finish. One for enjoying now, with roast lamb / beef / rich tomato sauced pastas.
