Filipa Pato’s family has been producing wine in Beiras since the 18th century. Her grandfather, João, was the first to bottle wine in Bairrada DOC after it was officially demarcated as an appellation, and her father, Luis, is credited with bringing Bairrada back to life as a viable and vibrant wine region. Filipa grew up immersed in the wine, vineyards and culture of her family, influenced by the terroir-driven wines of her father ‘the Baga rebel’, and one of Portugal’s legendary winemakers.
Passion for the traditional indigenous grape varietals of Bairrada led Filipa to start her own project in 2001. Together with her husband William Wouters, a Belgian sommelier and restaurateur, they farm 12 hectares of vineyards scattered across Bairrada. Utilizing biodynamic farming practices and minimal-intervention winemaking, and focusing solely on indigenous grapes, the duo produces vinhos autênticos sem maquilagem - Authentic Wines Without Makeup.

3B Rosé Extra Brut
This traditional method 3B stands for the region, along with the blend of 70/30 Baga / Bical, from 30+ year old vines on chalky clay. After a native ferment, and 9 months on lees, this is finished with zero sugar, unfined and unfiltered. Tart with cranberry astringency and a base of youthful rhubarb, subtle red currant and dried rose petals on a lean, lively, very mineral-driven base. Fresh and positively skipping with energy, this is a brisk, slight, savoury rosé ideal for charcuterie.

These biodynamic Baga grapes are handpicked from various partials in Bairrada, partly destemmed, and native fermented in 500-700L amphorae with very little extraction and a long maceration on the skins. After the fermentation the wine is pressed off and returned to amphorae for 6 months' aging. This is softly juicy and jubilant, with baga's inherent tannins softened by the amphora, leaving wild downy plum, rockrose, thorns, perfumed scrubby rosemary framed with lightly sticky tannins and lingering with raspy pink peppercorn.

Nossa Calcário Baga
This Baga is handpicked and hand selected from their centenary vineyards in the rocky limestone soils of Bairrada, yielding only 3 to 4 bunches/vine. Partly destemmed, this was fermented in open oak lagares with some pigeage. After fermentation the wine is aged in 500/600L pipas, plus 1 2000L foudre. Wild black plum, wild blackberry is structured with thorns and finely firm tannins, scented with purple wildflowers and scrubby rosemary. Very much in youth still, this will unravel and unknit beautifully with time.

Nossa Calcário Bical
These biodynamic Bical grapes come from the limestone clays of Óis do Bairro vineyard, and 40 year old vines. This was the first vineyard they purchased, and first converted to biodynamics. This was whole bunch, and native ferment in foudre and 500-600L pipas, where it remains on lees, with full MLF and without bâtonnage, for 9 months. Tight lemon, white grapefruit, and crunchy pear braces the ample mineral stoniness that rules the palate, kissed with wild fennel on the saline finish. Taut in youth, this harmonious wine will unfurl with time, though the minerality will always be its hallmark.

Territorio Vivo is a delicate Baga, reflective of the true term of Living Terroir. The old vines are handpicked from different vineyards currently under conversion to organics / biodynamics in Bairrada. Grapes were destemmed, and native fermented in open oak lagares with some extraction (pigeage) and little maceration on the skins. The wine is aged in 500 – 600L used pipas and tonel for 9 months.

This tight, bright sparkling blends native fermented Cercial, Bical, and Maria Gomes from chalky clay slopes cooled by the Atlantic breezes. It spends 9 months on lees in bottle prior to bottling. Crisp, racy, and dry, this mineral driven sparkler carries light pear, smoked stone, wild herbs, and subtle wildflower honey through a lightly creamy palate to the snappy finish.

Cantina del Pino is perched atop the hill in Barbaresco, overlooking the Ovello vineyard, and has been part of the Vacca family for over a century.

This biodynamic Baga is sourced partially from Filipa and William’s estate vineyards in Ois do Bairro, and partially from other limestone soiled growers in various villages in Bairrada. There’s a mix of bush vines and trellised plants with an average age of 40 years. The younger vines have been propagated by massale selection from the old vines in an effort to maintain diversity and select the best plant material available. Handpicked, this is partial whole cluster and fermented and raised entirely in tank with a very gentle extraction and long (4 week) maceration, adding the fine, firm structure here.
Perfumed plum, crushed purple florals, tayberry is scented with scrubby wild herbs and framed with fine, lithe tannins, taking this to a stony finish. Fantastic typicity in this gentle charmer.
