After studying law in Paris, Nicolas decided to make a U-turn and return to his roots in Corsica to live the dream of winemaking. Nicolas set up his winery in Oletta where he organically grows 7 ha of vines on his domaine. These organic Vermentinu (Vermentino) vines are a split between two limestone clay sites: Lumiu, South exposure; and 50% Mursaglia, East exposure. This was native fermented in stainless, where it remained for 1 year prior to bottling, without fining. Pear, white blossoms, pear skin, lemon pith stream along the medium palate, lightly textural, and effortlessly buoyant along a stony base. No boring vermentino here.
