Founded in 1707, the family owned Zárate estate is located in Rias Baixas' Vale do Salinas subregion. Their sloping, weathered granite vineyards are translated via Albariño, a grape intrinsically associated with the estate. Seventh-generation Eulogio Pomares runs this historic bodega today, farming almost fully biodynamically.

This rosé blends Caiño Tinto, Espadeiro, and Albariño from 15 year old vines on granite and red clays (locally referred to as castel), at 50m. The Caiño Tinto and Albariño were co-fermented after a cool maceration over 3 hours, then aged 3 months on fine lees in stainless. The whole bunches of Espadeiro went into French barrels, where it remained for 3 months. The two lots were then blended and bottled without fining or filtration.

Pouring a pale peach hue, this silken rosé streams strawberry blossoms, tangerine pith, pink grapefruit, subtle wild sage along a slender palate, with a gentle granitic buzz underlay that washes into salinity on the finish. Quite a serious, sophisticated rosé, as to be expected from Eulogio. Finished with a Diam10 cork, so can be expected to age.
