Thanks to the high elevation of the trees, the early picking and the quick crushing of the olives, the oil is characterized by low acidity and complex flavour profile. This oil is from Moraiolo olives, golden green in hue with an intensely fruity nose of green tones. The smooth palate continues the green artichoke note, with a fine balance between bitter and spicy.
