Domaine Rolet was founded in 1942 by Désiré Rolet. The children eventually took over the business, and the winery gradually acquired premium vineyards across all four Jura appellations including Arbois, Côtes du Jura, Étoile and Château-Chalon. Their 60 hectares of estate vineyards are beautiful slopes with different orientation and different types of soil allowing them to cultivate the 5 local grapes.
Since June 2018, the Flambert and Dupuis families began running the domaine, both passioned by the Jura and its wines. The wines are in the same spirit initiated by the Rolet family, with a philosophy to maintain a style of typical Jura wines, and continue the same conviction to meticulous work in the vineyard. The grapes are always handpicked, and each plot is harvested and vinified separately, with wines fermented wild with no inputs save for small amounts of SO2. Since 2018, the vineyards have been in conversion to organic.

Crémant du Jura Blanc de Blancs Coeur de Chardonnay
During his presidency of the Société de viticulture du Jura, Pierre Rolet was instrumental in the creation of the AOC Crémant du Jura in 1995. The Coeur de Chardonnay is a selection of the winery's best sparkling lots from Arbois and Côtes du Jura. The wine was whole cluster pressed and fermented at low temperature (18°C) in stainless, with no MLF, and spent a minimum of 40 months on lees, with a dosage of 4 g/L. Green apple, lemon brioche, and fresh bread dough is studded with flake salts, and lingering with shining lemon pith and peel. Quite complete, and super smart, drinking well now and with time ahead.

Arbois Rouge Tradition
From vines planted in Arbois and Montigny-lès-Arsures, on red marls, sandstones and gravels, this blends 45% Pinot Noir, 35% Trousseau, and 20% Poulsard. It was destemmed and native fermented without SO2 and 2 week’s maceration before aging 9 months (25% in older barrels).
This opens with a lift before swinging into rhubarb, juicy cherry, sapid branch, with finely firm, tea-lined tannins housing. A lovely lighter hand here.

Arbois Trousseau
Trousseau vines (30 years old) were planted in Montigny-les-Arsures, on hillsides on the localities of Chagnon and L'Euvrin, as well as Arbois' Montesserin, in red marl and clay soils. After destemming (with a small amount of stems) this was native fermented with 15 days’ maceration before resting 10 months primarily in foudres and oak, with a small part stainless.
Light cherry hue, this charms with perfumed wildflowers, wild raspberry, fine pink pepper, with fine, long tannins structuring through a saline finish. Very graceful and elegant.

Arbois Savagnin Ouillé
In the Jura, ouillé indicates that barrels are topped up with wine to prevent the oxidative character and flor yeast that is characteristic of old school classic Jura. Almost all modern Jura whites are made in this way, as are 99% of white wines worldwide. Savagnin is a very old variety which beget many other grapes over the centuries, including Chenin Blanc. This Savagnin is from parcels in Château Gimont and Gaillard, in Montigny-les-Arsures, planted in grey marls. It was native fermented in barrel, where it remained 9 months. Racy wild lemon, pear skin, wild green herbs streak across the tart, salty palate, with a subtle flax / lees bed that stretches long on the finish. Ample tension and energy here.

Arbois Blanc Tradition
This oxidative 50/50 blend of Chardonnay and Savagnin is from parcels in Château Gimon and Sous le Viaduc, in Montigny-Les-Arsures, planted in grey marls. The Savagnin is aged sous voile in an oak barrel for four years, while the Chardonnay was aged for four years in foudres, topped up (ouillé). The components were blended and rested for three months before bottling. Pouring a light golden hue, this opens with an evident oxidative note thanks to the savagnin (lightly reminiscent of amontillado) but with a creamy lemon, green apple, and lees woven in, courtesy of the chardy. The two seemingly at ends parts come together in a nutty, lemony, medium-bodied wine, with a fine grip around the sides and a lingering tart salted lemon finish. Try with a French onion soup.

Arbois Chardonnay
These 30+ year old vines are planted at the top of the vineyard En Chagnon, in Montigny-les-Arsures, up against a limestone cliff with gravels and grey marls. This aged 16 months in oak barrels (30% new). The expansive palate is layered with flake salts, flax, lees, green apple, all lit with a tight, vibrant lemony acidity through a very long, saline finish. Lovely gentle depth to this wine, making it an ideal companion to creamy white or green risottos.

This blend of 90% Pinot Noir and 10% Poulsard was whole cluster pressed and fermented at low temperature (18°C) in stainless, with no MLF, and spent 24 months on the lees. Dosage 6g/L. Very red fruited, with plum, tayberry and subtle dough on a crisp, racy palate, laced with salt and pithy grapefruit. Crisp and structured, this is built for food.

During his presidency of the Société de viticulture du Jura, Pierre Rolet was instrumental in the creation of the AOC Crémant du Jura in 1995.
The current NV Crémant du Jura Blanc Brut is from 2020, fermented in stainless with no MLF, and spends at least 2 years sur lattes before disgorged (date noted on the case) with 4 g/L. Based on chardonnay (50%), with savagnin, trousseau, poulsard, and pinot noir filling out the rest. This comes off estate vineyards in Arbois, Passenas, and Le Vernnois. Crisp green apple, bright lemon, fresh almond is kissed with meringue on the brisk, shining palate finishing with a slick of salinity. Quite lively at present, and a lovely evolution of style for the house.

L’Étoile Chardonnay En Novalet
This Chardonnay is grown on the hills near Lons Le Saunier, with distinguished soils of grey blue marls and star shaped fossils called pentacrine, after which this small appellation was named. Their plot, En Novalet, is located in the village of Planoiseau. The wine is fermented in barrique, where it ages for a year before bottling.
There's a lovely flinty reduction shaping this savoury medium bodied chardy, with crushed stones, lemon peel, green apple, and a white grapefruit cut that lingers on the saline finish. Quite a lot of impact for 13.5%, this is drinking very smart now, and with time ahead.
