On Seven is a new boutique Niagara winery owned by passionate wine aficionados Vittorio and Sula De Stefano. The De Stefanos bought an abandoned 7 acre vineyard (hence the name) in 2009 in Four Mile Creek, and under the guidance of consultant viticulturist and founding winemaker Peter Gamble, prepped the site for 3 years before replanting in 2014. The heavy clay loams are laced with calcareous deposits, and sloped north to maintain freshness. The philosophy from the beginning was to be 100% organic certified, and produce wines with minimal intervention. Wines are native fermented with no fining agents, and SO2 is added only at bottling.

On Seven Chardonnay
On Seven is a relatively new boutique Niagara winery owned by passionate wine aficionados Vittorio & Sula De Stefano. The De Stefanos bought an abandoned 7 acre vineyard (hence the name) in 2009 in Four Mile Creek, and under the guidance of consultant viticulturist and founding winemaker Peter Gamble, prepped the site for 3 years before replanting in 2014. The heavy clay loams are laced with calcareous deposits, and sloped north to maintain freshness. The philosophy from the beginning was to be 100% organic certified, and produce wines with minimal intervention.
This is primarily Dijon clone 76, planted 2014, with a small percentage of grapes from their 2015 planting of Dijon clone 95, and the 2018 plantings of Dijon clone 96. This was whole cluster pressed and transferred to French oak barrels (25% new) for native fermentation and 20 months aging. This hand labelled paint pen bottle is one of only 30 cases, and a barrel selection from the 2021 vintage. Pouring a glowing lemon hue this powerful white is sharpened with reduction, giving a pencil shavings edge to its white peach, green apple fruit. Light toast, marzipan, and honeycomb season, while the lees-deck palate bases this creamy, powerful white, lingering on the finish with crushed stones. Certainly a step up from their classic 2021 The Pursuit, drinking now, but worth some time ahead in your cellar.
"It's rare to see this kind of richness delivered with such precision. This is the debut bottling, at over $100, of a best barrel selection. It pours bright yellow gold. The nose is very generous and complex with golden peach, hazelnut, buttered garlic toast, lanolin, lemon and nutmeg spice. It is medium-full bodied, rich yet somehow so delicate and poised at the same time. Something rarely encountered, perhaps in Grand Cru white Burgundy. But there is also a ripeness, tropicality and ambiance that California Chardonnays can exhibit. Almost perfect balance here, great focus and outstanding length.
