Born into a family of growers and winemakers, Pascal had more than 20 vintages working experience in Bourgogne before he started his own project in 2012. Based in Savigny-les-Beaune, where he owns a half hectare organic vineyard, he farms 10 ha across 29 appellations in Bourgogne for his wines. 80% of his production is white wine, a passion honed by his years of winemaking at Coche Dury, amongst others. He farms with no chemicals, does native ferment in barrel, employs MLF, and never uses battonage in his wines.

Savigny-lès-Beaune Les Guettottes
Pascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing.
From the hills of his organic estate vines in Savigny-les-Beaune, Les Guettottes is from 50 year old vines with eastern exposure, on very stony clay limestones. He harvests this vineyard last, because of its cooler location. This is threaded with flinty reduction, wrapping around green apple, crunchy mirabelle plum, subtle white blossoms, and crushed stones, with great energy to drive this through a long lingering saline finish. A finessed and lovely example of 2021's cut and energy, drinking now and with time ahead.

Pascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing. From Savigny-les-Beaune and Puligny Montrachet, this was native fermented and held for 8 months in older barrels.
This opens with a strike of flint and ample toasted popcorn before bright Meyer lemon, fragrant white blossoms, and a hint of verbena stream through, all gripped with a fine stony spice that finishes saline. Quite smart, and drinking now.

Lemon blossom, green apple, and crunchy pear light up the medium palate, lofted by an easy limestone acidity, and over a savoury pencil shavings / lees base, through the buzzy saline finish. Very tight and fine, this is shining now and with time ahead in your cellar.

Sourced from several prime parcels across Côtes Chalonnaise's Rully, Pascal ferments and ages this wine in 500 L oak puncheons (25% new) for 11 months, with zero bâtonnage, before bottling with a very light filtration. The oak is evident in the subtle toast texturing the frame of this medium+ Chardonnay, woven through lemon curd, tight white blossoms, pencil shavings, all lit with a crunchy green apple acidity. This carries long on the palate, finishing with ample flake salts. A powerful Chardy, partnering well now with roast chicken / risotto, but will rest in your cellar happily.

Pernand-Vergelesses Les Belles Filles
Grown just around the hill from the Grand Cru of Corton Charlemagne, these vines are rooted between 250-300m in the foothills of the hillside, in clay / limestone soils mixed with chaillots. It was native fermented in foudre, where it remains for 11 months, with full MLF and no bâtonnage. Profound from the start, with a smouldering mix of lemon rind, crushed stones, flinty reduction, and subtly toasted oak, all taut with a vibrato of acidity. This is very reminiscent of its neighbouring GC, but with a freshness and tightness that is very welcome. Beauty now, and with time ahead.

From the cooler pocket of Narvaux, on white marl and limestone soils, this fuller wine has stunning ample cut, with tight green apple, crystalline lemon, and quartz chiseling through lemon curd and fresh hazelnuts on the streamline palate, finishing with ample salinity. This is such a pristine wine now, with focus atypical of the appellation, but which speaks to the site. Striking drinking now.

From 15 year old vines in a very cool climat of Pernand-Vergelesses, this whole bunch chardonnay was native fermented and aged 16 months in older wood, with no bâtonnage.

In the warm 2015 vintage, Pascal stopped MLF on his whites, which is usually employed. Vide Bourse is smartly located under Bâtard Montrachet, and a great mix between the brilliance of Puligny and the richness of Chassagne. Ripe and rich, with toasted hazelnuts, lemon curd, cream, elastic, shaped by green and yellow apple, and lingering with flake salts. A more upfront, powerful and attention grabbing style, which would well suit many protein / cream dishes.

Saint Romain 2015
From Saint Romain, a region larger and less well known than Saint-Aubin (thus a hidden gem for value-seekers), this was native fermented in foudres, where it was held for a year. Pascal, well known for his exceptional white wines, loves using older large barrels for his whites, as he feels it brings out the saltiness in the wine. Pascal also never uses batonnage on his wines, leaving them on full lees in barrels after pressing. Due to the warm 2015 vintage, Pascal decided not to do MLF here, as he normally does. Licks of reduction and savoury brown butter are woven throughout this textural wine, with flax, meadow grass, broken stones and a persistent wash of salts through the lingering finish. Quite fresh now, even considering the vintage, this elegant wine is drinking beautifully now, with time ahead.

From a plot on the edge with Meursault, on an old quarry's rocky, skeletal soils, this is a striking example of Puligny Montrachet. Tight and nimble up front, this opens into a flint lined, structural white, with lemon pith and blossoms, almonds, and fine cream on the core, and ample minerality leading to a lengthy, super saline finish. Great tension throughout, this grows in the glass, and will continue to impress with cellaring.

Savigny-lès-Beaune Les Planchots
Pascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing.
Les Planchots is located at the entrance to the Savigny-lès-Beaune valley, close to the national highway. The Rhoin River flows close to the plot.
Planchot is the Burgundian derivative of Planche (from the late Latin Planca). Since the Middle Ages, the word Planche has been used to describe a footbridge, a small bridge made of planks allowing people and animals to cross on foot.
This organic estate wine was native fermented and rested in older wood for 8 months. It opens with ample toasty, buttered popcorn and lemon curd, kissed with reduction and loaded with flake salts. Ripe green apple, lemon peel, and toast fill out the rest of this powerful, driven wine, more a Meursault in style than a typical Savigny-les-Beaune. Certainly age worthy.
