From the organic Casato Prime Donne property, this Brunello comes from vineyards on the cooler northern side, around 225 m altitude, on soils rich in clay and silt. The native fermentation takes place in small stainless and bare concrete, after which it rests in older tonneaux and big barrels for at least 2 years, followed by a period of at least 6 months in bottles.
From the stellar 2019 vintage, this structural wine rolls across the palate with waves of crushed florals, sultry cherry, deep plum, leather, and dark cocoa, wrapped with ample chewy tannins, and finishing with a trailing dried florals and tobacco. Very harmonious, and will reward with some time in cellar.

Now with a new label and name, this is the revamped FitaPreta Tinto of past. This characterful blend of Aragonez, Alfrocheiro, Moreto, Alicante Bouschet, Tinta Carvalha, and Castelão comes from the rocky schistous and granite vineyards of Alentejo and vines planted 1979-1989 at 300-400m. After the berries were popped and native fermented in stainless, they rested in French barrel over 1 year prior to bottling.
Wild blackberry, plum, and boysenberry flood the juicy palate, scented with rockrose and herbal scrub, and lingering with cracked pepper. Tannins are sticky, but well absorbed into the lifted red. A lovely characterful Alentejo.

This is 1938-planted Xarel-lo from El Buschet vineyard, in the mineral-laden Garraf Mountains sub zone. After picking and leaving with stems on skins for 15 days, this spends 6 months in amphora before a light filtration and bottling.
Bright and tart with tangerine, fragrant kumquat, and crunchy Asian pear along a slight 12% palate, this is lightly gripped by skins through a brief, astringent finish. Quite natural and pure expression of the grape.

The delicate pink hue is mirrored with the delicate blossoms opening the palate, followed by crunchy and fresh pink grapefruit, perfumed Asian pear, tangerine, all lit with a buzzy energy running the length of this sleek, bone dry pink. A beauty.

Il Caberlot Demi-Magnum
One of the rarest wines in Tuscany, the secluded hilltop estate of Podere Il Carnasciale, in the mountains of southern Chianti’s Valdarno region, is the only vineyard to cultivate Caberlot. The grape is a genetic mutation of Cabernet Franc, with distinct characteristics of Merlot. It was discovered in Veneto by Remigo Bordini, and planted in conjunction with Bettina and Wolf Rogosky at the Tuscan estate in 1986, with the aim of producing something entirely different from the Chianti of the time. Though the X on the label may look the same each year, it's a different colour, and brushstroke, every vintage. This aged in French fûts and barriques, 50-60% new, for 22 months, and was racked only once prior to bottling unfiltered. The wine is typically bottled in magnums only (2000 annually), resting an additional 18 months prior to release. However, they release a limited number of ‘demi-magnums’ of 750ml, primarily for restaurants and importers.
Dark and fleshy, with wild blackberry, black cherry, dark florals, anise, wild herbs, and sapid thorns stretched long across a structural palate. Tannins are ample and firmly grippy / gritty still, starting to yield, but signalling a long life ahead. Drinking beautifully now, but with another decade easy. I
"The 2021 Caberlot is a wine of mind- blowing intensity, complexity and nuance. Red cherry, plum, orange peel, spice, licorice, cedar and new leather are some of the many notes that grace this exquisite, resonant wine. It’s hard to remember many vintages in which Caberlot has this much fruit intensity, aromatic explosiveness and freshness. It is a riveting, absolutely stunning wine from the Rogosky family. Even with all of its intensity, the 2021 is not a huge nor opulent wine, but rather, it is the wine’s energy and intense minerality that really stand out. Carnasciale
Carnasciale is the second label of Il Carnasciale's iconic Caberlot, ready for drinking earlier and made with young vines, but with all the layers, and care, given to its big brother. Podere Il Carnasciale is situated in the southern Chianti mountains in the Valdarno di Sopra region of Tuscany, 30km north of Siena and Arezzo and 60 km south of Florence. True to original owner’s (Wolf Rogosky) vision, the secluded hilltop estate is run today by Moritz Rogosky, his daughter Carla-Elle and his mother Bettina, together with the enologist and winemaker Marco Maffei. This Caberlot, a naturally occurring crossing of Cabernet Franc and Merlot, is cultivated exclusively at Podere Il Carnasciale. After a native stainless start to the ferment, MLF is finished in a French 40hl botte grande where it remains for 22 months, before bottling and 6 months' rest prior to release. Ample dark florals and lashes of cracked pepper meet wild blackberry and cherry on the fleshy, savoury, and supple palate. Ample tannins are very well integrated, and acidity is bright and buzzy. Structural yet very drinkable now, this is a wine to seek out.
"The 2021 Carnasciale is laced with dark berries, mocha, new leather, licorice and rose petals. This is an especially aromatic, restrained vintage for the Carnasciale in which aromatics are quite prominent, while fruit lies more in the background, buried by the wine’s structure. From the secluded hilltop estate of Podere Il Carnasciale, in the mountains of south eastern Chianti’s Valdarno region, this organically farmed Sangiovese is rooted in clay limestone soils. After a native ferment in stainless and concrete, this rested 14 months in stainless, and a few months in bottle prior to release. After a youthful puff of reduction blows off, this savoury red moves into black cherry, wild raspberry, crushed stones, with cracked pepper, mustard seed, and scrubby herbs. Ample grippy tannins take this through the lingering finish.
"The 2022 Ottantadue (Sangiovese) is gorgeous. Bright, floral and super-expressive, the Ottantadue shows the fresher side of Sangiovese. A dollop of whole clusters (20%) works so well here. The inspiration is clearly Beaujolais. Although an unusual wine, the Ottantadue is an absolute delight. This Tinto is 60-70% Garnacha Tinta, 30% Cariñena, 10% Syrah from calcareous clays, native fermented and aged in concrete tanks for 6 months.
Scrubby herbs and broken stones imbue black raspberry, wild cherry, perfumed dark plum, and cracked pepper, with an easy lifted acidity, and long, finely buzzy tannins. A very pure and pretty expression of place and grapes.

NATURAL is Fritz Wieninger's experimental range of wines, still biodynamic, as is his family's Weingut Wieninger. This is the only NATURAL wine done in stainless, and here it spends 3.5 months on skins prior to bottling without fining, filtration, or sulphur. This Grüner Veltliner comes from an old vineyard in Ried Gabrissen on Vienna's Bisamberg, a sunny south-facing location on loess, with high lime content and a prominent gravel band in the higher part of the vineyard.
Juicy and bright with white grapefruit, crunchy yellow and green apple, white melon, and crystalline lemon that lingers on the saline and white pepper finish. Lovely purity and energy in this slender white.

Domaine Bonnet-Huteau, nestled in La Chapelle-Heulin, in the heart of Muscadet’s Sèvre et Maine appellation, has been producing Muscadet for over 150 years. Today it is run by the Bonnet brothers, Jean-Jacques and Rémi. This 42 hectare vineyard has been certified organic since 2005, and biodynamic since 2010. They’ve divided their Melon de Bourgogne into parcels to highlight the nuances and subtlety of their individual terroirs, and their focus is on producing pure, fresh, Muscadet.
From 20-30 year old vines and profoundly rocky clays and amphibolite fossil-rich volcanic soils, Les Gautronnières was native fermented in stainless, with full MLF and 9 months on lees. Bright and shining Asian pear, green apple, pear blossom stream through the sleek palate, gently textured via the profound soils, and easily lofted with maritime acidity through a lingering saline finish. Super smart now, and with time ahead.
“All creamy, wet stones, lime and lemon curd on the nose and palate, with more exotic white pepper, cumin and caraway notes slipping in, this is a fascinating example of Muscadet with complexity far above the mean. The palate shows considerable carbon dioxide locked in, which ups the freshness so no issue, but you could decant if you want to dissipate. Length is excellent. Precise, tightly framed, impeccably made, good grapes, good terroir. Has more than a minor Chablisienne feel to it. Drink or hold into the early '30s - stuffing to last. Nos pas dans... is a series of soil / grape studies put out by Marie Copinet.
Complantée is a field blend of Pinot Noir and Pinot Meunier from the plot of La Charbonnière, in the village of Brouillet, situated in the little-known Vallée de l'Ardre, east of Reims. The soils are dark and crumbly, as seen on the label. It was native fermented and vinified in large oak (60%) and stainless, and is from the 2019 vintage. It remained sur lattes until November 2025, when it was disgorged with 0 dosage.
"From a complanted parcel of Pinot Noir and Pinot Meunier in the Vallée de l'Ardre. Lieu-dit La Charbonnière. Zero dosage. Lemon-blossom, lemon-curd nose. Very slightly richer and rounder than the Copinet Chardonnay wines, but with masses of chalky texture and flavour. Like all these Copinet champagnes, terse and brisk on the finish. From the 2021 vintage this native fermented in stainless steel egg with full MLF before heading to bottle and 2 years on lees. This was disgorged in November 2025 with 0 dosage.

Marie-Laure Copinet and her winemaker husband Alexandre Kowal have taken over her family's estate, founded by her father Jacques in 1975. Before then, the Copinets were selling their fruit to Moet, but Jacques' work at Taittinger led him to decide to create their own grower champagne (RM) estate. They are based in the tiny Champagne village of Montgenost (population 140) in the Côtes des Sézanne, and they own 9 hectares of vineyards in Côtes des Sézanne, Côtes des Bar, and Vallée de la Marne, producing only 5,500 cases annually, and began organic conversion in 2018. Nos pas dans... is a series of soil / grape studies put out by Marie Copinet.
In this case this is Pinot Noir from 2 lieu-dit rooted in the kimmeridgian soils of the Côtes des Bar. From the 2021 vintage, this was native fermented, with full MLF, in stainless and 15% oak barrels. It was disgorged November 2025, with 0 dosage.

In this case, this is Chardonnay on the chalky soils of Montgenost, and from the 2021 vintage. This was native fermented with full MLF in stainless, and spent 36 months on lees before disgorge in May 2025 with 0 dosage.

Today it is run by the Bonnet brothers, Jean-Jacques and Rémi. This 42 hectare vineyard has been certified organic since 2005, and biodynamic since 2010. They’ve divided their Melon de Bourgogne into parcels to highlight the nuances and subtlety of their individual terroirs, and their focus is on producing pure, fresh, Muscadet.
From 20-30 year old vines and profoundly rocky clays and amphibolite fossil-rich volcanic soils, Les Gautronnières was native fermented in stainless, with full MLF and 9 months on lees. Bright and shining Asian pear, green apple, pear blossom stream through the sleek palate, gently textured via the profound soils, and easily lofted with maritime acidity through a lingering saline finish. Château Haut-Blanville is a family-owned Languedoc wine estate that was founded in 1997 by Béatrice & Bernard Nivollet. Their 70 ha of vineyards extend across The Grés de Montpellier AOP, stretching from the Hérault middle valley to the Vidourle, and from the Mediterranean in the south to the Pic Saint-Loup in the north. Wines are produced naturally, without the use of any additions except a minimal amount of sulphur upon bottling. This pinot noir comes from the limestone and basalt soils of Pézenas at 100-150m, on a cool, north-facing single vineyard.
Fragrant blackberry, plump plum flood a juicy palate, with perfumed baking spices to season, and fine, supple tannins to frame. There's an alluring stony underlay here, reflective of the profound soils of Pézenas. Great value.

Les Planchots is located at the entrance to the Savigny-lès-Beaune valley, close to the national highway. The Rhoin River flows close to the plot.
Planchot is the Burgundian derivative of Planche (from the late Latin Planca). Since the Middle Ages, the word Planche has been used to describe a footbridge, a small bridge made of planks allowing people and animals to cross on foot.
This organic estate wine was native fermented and rested in older wood for 8 months. It opens with ample toasty, buttered popcorn and lemon curd, kissed with reduction and loaded with flake salts. Ripe green apple, lemon peel, and toast fill out the rest of this powerful, driven wine, more a Meursault in style than a typical Savigny-les-Beaune. Certainly age worthy.

From the hills of his organic estate vines in Savigny-les-Beaune, Les Guettottes is from 50 year old vines with eastern exposure, on very stony clay limestones. He harvests this vineyard last, because of its cooler location. This is threaded with flinty reduction, wrapping around green apple, crunchy mirabelle plum, subtle white blossoms, and crushed stones, with great energy to drive this through a long lingering saline finish. A finessed and lovely example of 2021's cut and energy, drinking now and with time ahead.

Ilimitado is akin to Seabra's village wine. This Branco comes from mica, schist, and feldspar soils (what winemaker Luis Seabra deems the best for whites), this is a field blend of Rabigato, Códega, Gouveio, Viosinho and more, with vines 30-60 years old, and at 400-500m in altitude. After crushing and destemming, the grapes are pressed together, native fermented, and aged in used French oak barrels for 1 year on lees, with no MLF or bâtonnage.
Perfumed pear blossom, gooseberry, green fig, and lemon are woven across the stony palate, tightened with grapefruit pith, and stretched long on the lingering, saline finish. Great energy here.
